A TASTE OF GRAMMAR
Modes of cooking: Ã la, au, aux.

1) Many French dishes are prepared à la ... something.

  Listen!
>> Une daube à la provençale
>> Des pommes de terre à la vapeur
steamed potatoes

Rule: Ã la indicates "a way of cooking" and is always used with feminine names.
But it also means "with":

>> Une tarte à la crème
a pie "with" cream, a cream pie

2) The masculine form is au.

>> Un coq au vin:
literally, rooster with wine; chicken cooked in wine
>> Une salade au roquefort:
a green salad with roquefort

3) Aux is used with plural names.

>> Un poulet aux olives:
chicken with olives
>> Une omelette aux fines herbes:
an omelette with fine herbs

  • Note: we use à l' when two vowels "clash" (feminine). Ex:

Un canard à la orange is wrong. But un canard à l'orange is right!

>> canard à l'orange:
duck with orange sauce
